Owners of Mt. Everest Cafe Open New Restaurant in Fort Collins
A new restaurant is set to open Thursday at the Front Range Village in Fort Collins under the same ownership as Mt. Everest Cafe.
Dawa Sherpa and his wife, Tashi, have turned their restaurant, Mt. Everest Cafe, into a Fort Collins dining staple. Now, according to the Coloradoan, they'll be opening a second Nepalese restaurant with Chinese and Tibetan influences called Himalayan Bistro in the Front Range Village at 2720 Council Tree Avenue, Suite 184.
"My goal is to let people learn about my culture and share it," said Sherpa, a native of Nepal who moved to Colorado in 1998.
While he and his wife manage the new restaurant with a more traditional menu consisting of curries, masalas, and biryani dishes, Sherpa's sister and brother-in-law will take over management of Mt. Everest Cafe.
"[Himalayan Bistro] will be a bit more upscale," he told the Coloradoan. "It has also been our dream to have a place like this. And we always come to this area and there's no restaurants like this."
Himalayan Bistro will open Thursday, June 16, serving lunch from 11 a.m. to 3 p.m. and dinner from 5 to 9:30 p.m.
