We asked Northern Colorado to tell us where to find the best food on wheels, and your favorite food trucks to catch rollin' through town were Waffle Lab, Taco Stop and On the Hook. But only one can be NoCo's Best!

Last Tuesday, we headed to the Fort Collins Food Truck Rally, strictly on business — OK, pleasure too. We tried the Waffle Lab's classic chicken and waffles, the grilled cheese waffle, and the sweet European. We had such a great time kickin' it in City Park with friends we hadn't seen in a long time: the experience alone was fantastic.

On the Hook may have started in Wyoming, but the food truck serves up line-caught wild Alaskan codfish and chips. You can catch the truck rolling all over Colorado, with reviewers raving about the "super flaky and moist," "perfectly fried" fish.

There's nothing better than Taco Stop when it comes to fan favorites.

"From Mexico City, con amor," if you love authentic Mexican food with a variety of options for various diets, you'll dig Taco Stop.

"As we transformed our business from food cart to food truck to restaurant, two things always stay consistent, good food and good people," Taco Stop's website says. We spoke with the employees at Taco Stop's brick-and-mortar restaurant in Fort Collins, and they're looking to up their staff so they can get the truck regularly rolling again.

NoCo's Best is an annual program that recognizes the best Northern Colorado restaurants and food selected by the residents of Fort Collins, Loveland, Greeley and NoCo towns.

NoCo's Best 2021 winners were announced at the 2021 Taste of Fort Collins.
