People in Colorado are passionate about food. Whether for taste or for health benefits, humans rely on food, and we all have different preferences. We are all certainly opinionated. For example, I love pizza and I am relatively picky about it.

I firmly believe that pizza by the slice is superior to any other type of pizza. A Brooklyn-style pizza is far better than any other style, and nobody can convince me otherwise. I am fortunate to live in Fort Collins, where there are plenty of options for my preference.

See? We all have opinions. Colorado's favorite restaurant chain certainly has nothing to do with pizza. In fact, Colorado's favorite chain is way more healthy than you would think.

Never heard of everbowl? Are you wondering why it isn't capitalized? I do not have an answer for why everbowl is not capitalized, but I do know why it is Colorado's favorite.

If you don't know what açaí is, it is kind of like a smoothie that can have a lot of different toppings. It is often served with fruits and grains. An açaí bowl is not a smoothie and it is consumed from a bowl.

Açaí bowls are a superfood and they are incredibly healthy. If you have not heard of everbowl, you are not the only one. There are only four locations in Colorado and they are in Arapahoe, Arvada, Denver, and Greenwood Village.

The Michelin Guide debuted in Colorado in 2023, with five restaurants earning one Michelin star and four noted at Green Star restaurants.

Nine also earned Michelin’s Bib Gourmand distinction, recognizing these restaurants' great food and value.

In total, the inaugural guide identified 44 standout restaurants.

For 2024, Michelin added a one-star restaurant, a Bib Gourmand and two new recommended restaurants: Brasserie Brixton in Denver and Kawa Ni, also in Denver. 

Michelin-starred restaurants earn up to three stars from anonymous inspectors who assess product quality, mastery of cooking techniques, harmony of flavors, the personality of the chef as reflected in the cuisine, and consistency over time and across the entire menu.
