What started out as a gourmet food truck back in 2012, eventually morphed into a hip, downtown brick and mortar restaurant — and now The Waffle Lab announced big plans of opening up a second location in Old Town, Fort Collins.

The Waffle Lab will be coming to The Exchange, taking over FoCo DoCo's former spot on College Avenue, since they recently moved out and to a different building in town.

The popular restaurant that specializes in serving up Belgian-style Liège waffle combinations, explained that their new location will be open late-night, so when the Olive Street store closes at 2 p.m., waffle-lovers can still get their fix.

Having this new location is also somewhat of a "homecoming" for the local restaurant, because when they first started out, the mobile OG Waffle Lab would often park on the block of College and Pine (prior to The Exchange being built). To celebrate this, The Waffle Lab plans on featuring several throwback items on the menu.

Staff said diners can be on the lookout for other new food choices at The Exchange location too, including an expanded and customizable waffle donut menu.

Earlier this year, The Waffle Lab announced more expansion plans, as they prepared to open another new location near CU's campus in Boulder.
